The sapwood is the first part of a log to rot. Here you can see a clue as to why. This oak cross-section clearly shows the interior heartwood and the recently living exterior sapwood. The sapwood is where food reserves were stored, and when the tree is cut, they ooze out in the sap - and that is where the flies come to feed as it ferments.
